A varnish is a protecting coat, namely from UVs.
Doesn't totally protect, of course, but it protects a bit.
Even acrylic paints should be varnished since the acrylic paint is porous (sp?).
When I work in layers (that's my usual process), I apply a retouch varnish in spray after two months. Then after another month or two, I apply another coat of the same.
After six months (from the completion of the paint), I apply dammar varnish (diluted with a bit of artist quality turps, NEVER drugstore quality), using a wide and soft brush.
There's also a good varnish (never used it though) called Soluvar, from Liquitex.

uneven sheen, it depends on how thick your paint is, and what oil medium you add...you be the judge, some looks good w/out varnish ...
For applying spray varnish you have to wait until your oil painting dries completely, at least after 3 weeks. If you do not apply it, it might happen, that in oil painting you will have spots, some matt and dull and some glazy.
